For the year of the auspicious goat, Prima Tower Revolving Restaurant is set to say "Gong Xi Fa Cai" and bestow upon consumers greater prosperity to beat the economic glum with its culinary breakthrough, Goose Liver Yu Sheng this festive season. " Goose liver or foie gras is a delicacy in French cuisine and it represents wealth and status. By introducing Goose Liver Yu Sheng, the restaurant has seamlessly fused the concept of wealth and beckoning prosperity together to ensure a symbolic blessing as we carry out our traditional "lo hei" this Lunar New Year," said Chef Chan, Master Chef at Prima Tower Revolving Restaurant. Thoughtfully conceptualised and concocted, the Goose Liver Yu Sheng is made using a carefully selected variety of coloured ingredients to represent the gaiety and auspicious spirit of the rainbow. Adding to the "oomph" of each bite are freshly cut vegetables like purple lettuce, crunchy cucumber, winter melon and other delicious ingredients like jelly fish, citrus orange peels, aromatic ginger and not forgetting the pink goose liver, thinly sliced and pan-seared to perfection. Symbolising the treasure within, the goose liver, which is specially imported from France is first marinated with white wine and Chef Chan's special sauce to ensure its fragrance when pan-fried. The goose liver, which is sliced thinly in order not to overwhelm the dish's well-balanced taste, is then served slightly chilled to complement its salad ingredients perfectly. Instead of using the traditional plum sauce in addition to pepper and salt, the Goose Liver Yu Sheng is made to taste with a specially concocted sauce made primarily from peanut paste, chilli sauce, bean paste and plum sauce. Boasting a smoky and tangy taste, the special sauce and the crisp freshness of the shredded vegetables and fruit peels complement and draw out the delicious pan-fried fragrance of the goose liver in each irresistible bite. " Giving Lunar New Year a French twist, the Goose Liver Yu Sheng will be indeed a refreshing change from the traditional Yu Sheng with raw fish slices.
